Fantastically Fabulous French Toast


Buon Giorno! We are super into breakfast around here! I mean, comon', it kick starts your metabolism, it's what you want to get out of bed for in the morning & it can be delectable - as it was a couple mornings ago! After we have an Italian meal, there is, without fail, left over bread! It used to sit in my kitchen until it was moldy & awful & if there is one thing that gets under my skin, it's wasted food - there is no excuse when we are blessed to have the life we have! So I came up with this inspired french toast! I hope you like it! It's perfect with fresh fruit, tofu scramble & tempeh bacon!! Somebody stop me! ;)








Friggin' Fantastic Frenchies

-Leftover bread (preferably a sourdough stick), cut into small toasts (like crostini)
-Earth Balance (or other Vegan butter)
-1 cup soymilk (I'm sure you could substitute your favorite Vegan milk - let me know if you do & how it works!)
-2 1/2 tbsp oat flour
-2 tbsp almond butter
-scant tbsp ground flaxseed
- 1 tbsp maple syrup
-1 tsp vanilla extract
-1 heaping tsp cinnamon

1. Place soy milk, oat flour, almond butter, flaxseed, maple syrup, vanilla & cinnamon in a medium sized bowl & whisk to combine. 


       2. Heat up your griddle or a large non-stick pan on medium-high heat for a minute or two. Add in a bit of vegan butter, melt then turn the heat down to medium. Take 4 slices and dunk them in the soy milk mixture & completely coat, then put them on the pan. The first side will take about 4 minutes & the second, a little less. Adding more butter to the pan, repeat with the remaining slices of dunked bread. 

      3. Serve hot with vegan butter, maple syrup, almond butter, cinnamon, fresh fruit, tofu scramble, roasted potatoes, tempeh bacon, etc, etc, etc!


Now that's the way to start the day!
